I love waffles for breakfast as I can do them with any flavours and toppings. In this case, it is savoury with soft-boiled eggs for a more protein-rich meal.
Preheat the waffle maker.
Mix all the ingredients for waffles in a bowl until well combined.
Bake 4 waffles until golden brown, about 2-3 minutes.
Meanwhile, cook 4 eggs in simmering water for 7-8 minutes.
When all is ready, serve with some plum tomatoes and enjoy!
