Description

I love waffles for breakfast as I can do them with any flavours and toppings. In this case, it is savoury with soft-boiled eggs for a more protein-rich meal.

Ingredients
  • 1 egg
  • 50 g cottage cheese
  • 50 ml milk
  • 20 g spinach (chopped)
  • 1 tbsp butter (soft/melted)
  • 100 g self-rising flour
  • salt and pepper (to taste)
Instructions
  1. Preheat the waffle maker.

  2. Mix all the ingredients for waffles in a bowl until well combined.

  3. Bake 4 waffles until golden brown, about 2-3 minutes.

  4. Meanwhile, cook 4 eggs in simmering water for 7-8 minutes.

  5. When all is ready, serve with some plum tomatoes and enjoy!
