This is super easy and tasty stuffed mushrooms for meatless lunch or dinner.
I love mushrooms because it is so easy and quick to cook them. This stuffed with tomatoes and mozzarella version is perfect for hot summer days. It is prepared in minutes and cooked in about 20 minutes. So serve with some fresh green salad and you will have great nutrituios complete meal.
Preheat the oven to 180 C.
Place the mushrooms on a baking dish and season them with salt and pepper.
In the bowl mix tomatoes, mozzarella, basil and chilli pepper, season with salt and pepper, and add olive oil.
Stuff the mushrooms with the cheese mixture evenly.
Bake for 18-20 minutes.
When ready serve with a fresh green salad.
