Stuffed Zucchini Boats

These Stuffed Zucchini Boats are a great way to enjoy tender spring zucchini with juicy meat sauce. I love the combination of veggies and meat, it is filling and light for lunch or dinner and also full of nutrients. It is a hearty low carb dish that the whole family can enjoy!
It is easy to add more of your favourite veggies into meat sauce, so you'll get a rich and flavourful mixture.
Serve this dish with some salad on a side or garlic/cheese bread.
It is super easy to cook, the trickiest part is to hollow out the zucchini. But they're worth the extra effort.

Description

These boats are are the best in zucchini season. Use any minced meat that you used to cook as turkey, beef, pork etc. This dish is a great source of protein and fibre. Add more vegetables into meat sauce to boost the flavour.

Ingredients
  • 1 medium zucchini (halved and hollowed)
  • 200 g turkey mince
  • 1/2 bell pepper (chopped finely)
  • 1 medium white onion (finely diced)
  • 2-3 garlic cloves (minced)
  • 100 g Cheddar cheese (shredded)
  • 3 tsp olive oil
  • 1 tbsp parsley (chopped)
  • 100 ml tomato sauce
  • 1 tbsp tomato puree
  • 1 tsp dry oregano
  • 1 tsp dry thyme
  • 1 tsp dry chilli flakes
  • 1 tsp paprika
  • salt and pepper (to taste)
Instructions
  1. INSTRUCTIONS

    Preheat the oven to 190 degrees C.

  2. Cut the zucchini in half lengthwise. Use the spoon to carefully scoop out the flesh of the zucchini. Chop the flesh finely.

  3. Heat the olive oil in a large pan over medium-high heat. Add half of the onion and garlic and cook for 2 minutes, then add turkey mince and cook until no pink remains.

  4. Add bell pepper and chopped zucchini flesh, seasoning and half of tomato sauce. Simmer for 10 minutes.

  5. Mix the remaining tomato sauce, garlic, onion, parsley, salt and pepper to taste.

  6. Spread tomato sauce on the baking dish, place zucchini and fill with the turkey mixture, top with cheese.

  7. Bake for 30-35 minutes or until zucchini is soft and cheese is bubbly.

  8. Serve it warm and enjoy!

Note

If you cook big batch of stuffed zucchini then choose zucchini the same size.
