Taco salad is not just a dish; it’s a lively, sensory experience that blends Mexican cuisine's bold flavours and textures into a single bowl or platter. It’s a meal designed to excite the palate with its colourful presentation, layers of textures, and dynamic flavours.

Ingredients
  • 250 g chicken breast fillet (sliced lenghwise)
  • 1 bell pepper (chopped)
  • 1 avocado (sliced)
  • 50 g lettuce (chopped)
  • 50 g cherry tomatoes (quartered)
  • 1 small red onion (finely chopped)
  • 50 g sweet corn (tinned, drained)
  • 50 g kidney beans (tinned, rinsed and drained)
  • 1 tbsp sweet paprika
  • salt and pepper (to taste)
  • 1 tbsp olive oil
  • For the dressing:
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1/2 tsp chilli flakes
  • salt and pepper (to taste)
Instructions
  1. Preheat the pan with olive oil to medium heat.

  2. Season chicken fillet with salt, pepper, and paprika on both sides.

  3. Cook the chicken fillet for 5 minutes on each side, until cooked trough. Set aside on a plate for 2-3 minutes, then slice into bite-sized pieces.

  4. Mix all the ingredients for dressing in a small bowl until well combined.

  5. In a bowl add all the chopped vegetables, then add chicken and jalapeno, then top with the dressing and gently mix. Divide between 2 plates and enjoy!
