Tuna Salad

Using cupboard staples is always convenient, but in this case, it is super tasty too. Scrumptious and easy salad for lunch will be a great option as it takes minutes to put together.

Description

When I want something easy, quick and filling a canned tuna is a great option for many meals. But here we have one bowl salad, which is a complete meal as it has protein, fibre, vitamins and tastes so good.

Ingredients
  • 1 can tuna in brine (drained)
  • 100 g green beans
  • 100 g mix of salad leaves
  • 7 cherry tomatoes (halved)
  • 1/2 red onion (sliced)
  • 7 olives
  • 1 egg (soft boiled)
  • For marinade:
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 3-4 olives (finely chopped)
  • bunch of parsley (finely chopped)
  • 1 garlic clove (minced)
  • salt and pepper to taste
Instructions
  1. Blanche green beans in boiling salted water for 5-6 minutes. Then drain and rinse with cold water.

  2. Boil egg for 8 minutes.

  3. Drain tuna and flake it.

  4. Slice onion, and halve tomatoes.

  5. Mix the dressing in a small jar and shake it until emulsified.

  6. Plate salad and pour dressing on top. Mix and enjoy!
