Description

Super tasty comfort food in about 30 minutes.

Ingredients
  • 400 g lean tue=rkey mince
  • 1 g small courgette (about 100 g, grated)
  • 1 carrot (grated)
  • 1 small white onion (minced)
  • 2 garlic cloves (minced)
  • 2 tbsp breadcrumbs
  • 1 egg
  • salt and pepper (to taste)
  • For the sauce:
  • 1 small white onion (finely chopped)
  • 2 garlic cloves (minced)
  • 1 tbsp flour
  • 1 tbsp tomato puree
  • 2 tbsp soured cream
  • 150 ml water
  • salt and pepper to taste
  • For mashed potato:
  • 500 g potato (peeled, cubed)
  • 1 tbsp butter
  • 1 tbsp soured cream
  • salt to taste
  • water (to cover the potato)
Instructions
  1. Preheat the oven to 180 C.

  2. Mix all the ingredients for the meatballs.

  3. Form the meatballs about the size of a walnut and place them on a baking tray with parchment paper, top with 1 tbsp olive oil.

  4. Bake for 25-30 minutes.

  5. Meanwhile, boil the potato in salted water for 25 minutes.

  6. Drain the water and add butter and soured cream. Mash it until well combined, nice and fluffy.

  7. Meanwhile, preheat the frying pan to medium heat. Then add 1 tbsp olive oil and fry onion and garlic for 2-3 minutes, stirring it occasionally. 

  8. Next, add flour and cook for about 2 minutes, until golden brown.

  9. Then add tomato puree, cook for 1 minute stirring frequently. After that add the soured cream, and water and mix until well combined.

  10. Cook for 1-2 minutes on low heat until gets thicker. Then add meatballs and cook for another 1-2 minutes.

  11. Serve meatballs with mashed potato and enjoy!
