Description

Here we have delicious and vibrant grilled vegetables along with lean flavourful turkey meat cooked in one go. I love these easy, filling and low-carb recipes for busy weekdays.

Ingredients
  • 400 g turkey fillet (sliced into bite sized pieces)
  • 2 bell pepper (red, yellow)s (seeded, cutted into bite sized pieces)
  • 1 small courgette (cutted into bite sized pieces)
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp paprika
  • 1 tsp chilli flakes
  • 1/2 tsp turmeric
  • salt and pepper (to taste)
  • For sauce:
  • 150 g plain greek yoghurt
  • 1 tbsp coriander (finelly slicrd)
  • 1 pinch cumin
  • salt to taste
Instructions
  1. Preheat the grill.

  2. To the bowl with meat add lime juice, paprika, turmeric, chilli flakes, salt, black pepper and olive oil, and mix it well. Then marinate for 20-30 minutes.

  3. Next add olive oil to the vegetables, season with salt and pepper, and mix it well.

  4. After marinating tread the meat and veggies onto bamboo skewers.

  5. Grill it for 7-8 minutes, turning halfway.

  6. Meanwhile, mix all the ingredients for the sauce.

  7. And serve it when ready.
