Description

I like to use lean turkey thigh mince in this soup, so the whole meal is low on calories. But these meatballs are packed with flavours and as I add a variety of vegetables the broth in it is just right to make it perfect.

Ingredients
  • 100 g white onion (peeled, chopped into small cubes)
  • 100 g carrot (peeled, sliced into half moons)
  • 100 g celery (sliced thinly)
  • 200 g potato (peeled, cubed)
  • 500 ml chciken stock
  • 1 tbsp olive oil
  • salt and pepper (to taste)
  • For meatballs:
  • 200 g turkey thigh mince
  • 2 tbsp finely chopped oregano
  • 1 tsp dry garlic
  • salt and pepper (to taste)
Instructions
  1. Mix all ingredients for meatballs in a bowl, cover with cling film and leave in a fridge for about 10 minutes.

  2. In a pot heat 1 tbsp of olive oil on medium heat, then add onion and garlic, and cook for 2-3 minutes, stirring occasionally.

  3. Then add carrot and celery and cook for 1-2 minutes.

  4. Next, add potatoes, and chicken stock and form and add meatballs the size of a walnut.

  5. Season with salt and pepper and cook until potatoes are tender, for about 25 minutes.

  6. Serve with some fresh chopped parsley.
