This healthy and easy soup is my family's favourite. Perfect for light lunch or dinner.
I like to use lean turkey thigh mince in this soup, so the whole meal is low on calories. But these meatballs are packed with flavours and as I add a variety of vegetables the broth in it is just right to make it perfect.
Mix all ingredients for meatballs in a bowl, cover with cling film and leave in a fridge for about 10 minutes.
In a pot heat 1 tbsp of olive oil on medium heat, then add onion and garlic, and cook for 2-3 minutes, stirring occasionally.
Then add carrot and celery and cook for 1-2 minutes.
Next, add potatoes, and chicken stock and form and add meatballs the size of a walnut.
Season with salt and pepper and cook until potatoes are tender, for about 25 minutes.
Serve with some fresh chopped parsley.
