Super healthy and filling breakfast that makes you forget about food till next meal.
In a food processor put avocado, garlic, parsley, and lemon juice, season with salt and pepper and blitz until smooth. Then add cheese and stir gently.
Cook the eggs in simmering water for 6.5 minutes, then cool down them in cold water.
Spread the avocado on the toasted bread and add tomatoes on top. Serve with eggs, ham and some rocket leaves. Enjoy!
