In a food processor put avocado, garlic, parsley, and lemon juice, season with salt and pepper and blitz until smooth. Then add cheese and stir gently.
2 Cook the eggs in simmering water for 6.5 minutes, then cool down them in cold water.
3 Spread the avocado on the toasted bread and add tomatoes on top. Serve with eggs, ham and some rocket leaves. Enjoy!
