Each bite is a perfect harmony of textures and flavours. The fritters are golden with a mild, slightly sweet zucchini flavor. The smoked salmon adds a luxurious, smoky depth. The creamy accompaniments provide tanginess and richness, cutting through the salmon's saltiness. Fresh dill brightens the overall flavour, making it feel light and vibrant.

Ingredients
  • 300 g zucchini (grated, drained juice)
  • 1 egg
  • 1 tbsp flour
  • 1 tbsp dill (chopped)
  • 2 garlic cloves (minced)
  • salt and pepper (to taste)
  • 2 tbsp olive oil
  • 50 g smoked salmon (to serve)
  • 50 g salad mix (to serve)
  • 2 tbsp soured cream (to serve)
Instructions
  1. Preheat the pan with olive oil to medium heat.

  2. Mix all the ingredients except salmon, salad leaves and soured cream in a bowl.

  3. Fry fritters on the pan by putting 2 tbsp of zucchini mixture per fritter and cook until golden brown, for about 2 minutes per side.

  4. Serve warm fritters with slices of salmon, soured cream and salad leaves, top with dill and enjoy!
