  1. Preheat the oven to 200 °C.

  1. Add an aubergine to the bowl, along with olive oil, salt, and pepper. Mix well until well coated.

  1. Spread the aubergine on the baking tray with parchment paper and bake for 20 minutes, turning halfway.

  1. Meanwhile, season chicken with harissa spice and add salt and olive oil, spread to cover all over and leave to marinate for 15 minutes.

  1. Meanwhile, in a blender, add all the ingredients for the sauce, and blend until well combined.

  1. Preheat the grill pan with 1 tbsp olive oil over medium heat and cook chicken for 3-4 minutes per side, until cooked through. Then set aside on the plate to rest.

  1. When all is ready divide all the ingredients between two bowls and add sauce on top and enjoy!
