Apple and Berry Cake

This is such a fantastic fruit cake, amazing addition to any hot or cold drink.

Description

I love the combination of apples and berries in this cake. Use fresh or frozen berry mix. The addition of vanilla and lemon makes this cake perfect.

Ingredients

Instructions

  1. Preheat oven to 180 C.

  2. Butter the cake dish and sprinkle evenly with semolina.

  3. In a bowl whisk butter, vanilla paste and sugar until light and fluffy.

  4. Add 1 egg at a time and whisk until incorporated.

  5. Add a pinch of salt and lemon zest, gradually add flour and mix until well combined.

  6. In another bowl mix apples and cinnamon.

  7. Add apple mixture and berries to the bowl with batter, and mix gently.

  8. Transfer all the batter to the baking dish.

  9. Bake for 45-50 minutes until the toothpick comes out clean.
