Description

A combination of soft apples and cinnamon and the lemon flavour is perfect for this apple pie. It is great throughout the year, but especially amazing for autumn. I love the taste, and texture and how simple is this pie.

Ingredients

For apple filling:

Instructions

  1. Preheat the oven to 180 C.

  2. In a bowl mix all dry ingredients. Then add butter and mix it with your hands into crumbles.

  3. Next, add eggs and water and knead the dough.

  4. Wrap the dough in cling film and let it chill for 20-30 minutes in the fridge.

  5. Meanwhile peel, core and cube the apples.

  6. Next cook apples with sugar, lemon zest and juice in a pan on medium heat for about 10 minutes, until the apples are soft, but not mushy. Then let it cool down a bit.

  7. Next divide the dough into two parts, one a bit bigger than another one. Rool out the bigger part of the dough into a circle about 30 cm in diameter and transfer it to the baking dish. Roll out another dough into a circle 26 cm in diameter.

  8. Next, add apples to the baking form and cover with another circle of the dough. Press the edges with the fork.

  9. Bake for 35-40 minutes.

  10. When ready let it cool down for 15 minutes and serve with ice cream, custard or creams.
