Baked Salmon with Baby Potato and Dill Mayo

Salmon and baby potatoes cooking time is very short. This meal is filling and healthy. Serve with some green salad to add more fibre.

Description

An amazing combination of high in omega fish with tender buttered potatoes with dill and yummy dill mayo sauce is perfect.

Ingredients

Instructions

  1. Cook baby potatoes for 20 minutes in a pan with water with 1 tsp of salt. Water should cover the potatoes.

  2. Place salmon on a baking tray with parchment paper and season with salt and pepper, sprinkle with lemon juice.

  3. Cook salmon on medium under the grill for 20 minutes.

  4. Mix mayo, 1 tbsp lemon juice and dill in a small bowl.

  5. When potatoes are cooked add butter and 1 tbsp dill and gently mix.

  6. Serve with some green salad and enjoy!
