In this dish, we have a scrumptious combination of flavours. It is healthy and low-calorie, perfect for a busy day or evening.

For the basil mint oil:

Instructions

  1. Preheat the oven to 180 C.

  2. Place salmon fillets in the baking dish, season with salt and pepper, and squeeze some lemon juice on top.

  3. Bake fish for 15-17 minutes, depending on the size of the fish fillets.

  4. Meanwhile, mix all the ingredients for the basil mint dressing and set aside.

  5. Then brush courgette slices with olive oil and grill them for 1-2 minutes per side.

  6. Next, pour the dressing on top of the grilled courgette and gently mix.

  7. When the fish is ready, serve it with courgettes and top with chilli pepper and more mint and basil leaves. And enjoy!
