  1. Preheat the pot with olive oil.

  1. Add beef and cook for 5 minutes, season with salt and pepper, stirring occasionally.

  1. Remove beef from the pot and set aside on the plate.

    Then add onions, carrot, garlic, bell pepper and cook for about 5-7 minutes.

  1. Then return beef, add paprika, garlic powder, salt and pepper to taste, cook for 1-2 minutes, stirring occasionally.

  1. Next add potato, bay leaf and water to cover the veggies and meat. Cook for 40-45 minutes.

  1. When ready serve with a dollop of sour cream and parsley.
