Broccoli and Courgette Soup with Grilled Cheese Sandwich
Description
This soup is tasty and fast, as it is ready in less than 30 minutes. Best served with a grilled spicy cheese sandwich. So it warms up and fills up perfectly on colder days.

Preheat the pan with olive oil on medium heat and saute onion and garlic until soft, about 5 minutes, stirring occasionally.

Next add courgette, broccoli, potato and water. Season with salt and pepper and cook for 20 minutes or until potatoes are soft.

Meanwhile in a bowl mix all the ingredients for the cheese sandwich, except bread slices. Spread the mix on one slice of bread and cover with another.

Fry the cheese sandwich on a preheated pan with melted butter on low heat for a few 2-3 minutes per side until golden brown. Then flip it on the other side and fry until golden brown.

When the soup is cooked blend it with a blender until smooth and serve it topped with some olive oil and fresh herbs along with a warm cheese sandwich.
