  1. On a pan with olive oil on medium heat saute white onion for 2-3 minutes, then add carrots and cook them for another 2-3 minutes, stirring occasionally.

  2. Next, add chilli pepper and garlic and saute for 1-2 minutes. Then add chicken and cook for 4-5 minutes until pale pink, stirring occasionally.

  3. Then add paprika, salt and pepper and let it cook for 1-2 minutes. Next, add chorizo and cook for 1-2 minutes.

  4. Finally, add rice and 200 ml water, stir all well and cover with a lid.

  5. Cook on medium-low heat for 15-20 minutes, until the rice and meat are cooked.

  6. Serve warm with some fresh parsley on top and enjoy!
