Chicken Provencal
Description
This meal is low carb so it is a great option for a weight loss lunch. It is the best meal cooked in summer when all the veggies are in season and best quality, full of vitamins and nutrients.

Season chicken fillet with herbs de Provence, salt, and pepper on both sides.

Fry it on medium-high heat in a pan with olive oil for 5-7 minutes on each side.

Remove chicken from the pan on the plate aside.

Add all veggies to the pan and cook it for 15 minutes on medium heat, stirring occasionally.

Add parsley, season with salt and pepper, stir it and return the chicken. Cook for another 5-7 minutes.
