Chicken Salad with Basil Dressing

The chicken, whether grilled, roasted, or shredded, is tender and juicy, absorbing the flavors of the dressing beautifully. Preheat the oven to 180 C.

Season chicken fillet with salt and pepper on both sides.

Cook chicken fillet in a pan with 1 tbsp olive oil on medium-high heat for 2-3 minutes per side, until golden brown.

Then finish cooking i the oven for 8-10 minutes, until cooked through.

Meanwhile mix with hand blender all the ingredients for the dressing, until well combined.

Let cooked chicken breast rest for 5-7 minutes, then slice it.

In a bowl, mix all the vegetables, divide between 2 plates, add sliced chicken and top with the dressing and enjoy!
