  1. In a small bowl, combine all the sauce ingredients.

  1. Cook the rice in salted water for 10 minutes. 

  1. In a pan with olive oil on high heat, add the vegetables, except the pak choi, and cook for 2-3 minutes.

  1. Next, add the chicken and cook for an additional 2-3 minutes.

  1. Then add ginger, garlic and pak choi, season with salt and pepper and cook for 1-2 minutes.

  1. Then add sauce and cook for another 1-2 minutes.

  1. When all is ready, divide between two plates and serve with rice and sesame seeds on top. Enjoy!
