In a small bowl, combine all the sauce ingredients.

Cook the rice in salted water for 10 minutes.

In a pan with olive oil on high heat, add the vegetables, except the pak choi, and cook for 2-3 minutes.

Next, add the chicken and cook for an additional 2-3 minutes.

Then add ginger, garlic and pak choi, season with salt and pepper and cook for 1-2 minutes.

Then add sauce and cook for another 1-2 minutes.
