Description
This recipe helps to add more healthy fibre to our diet. Spinach is great for our bodies and here we can enjoy it along with chicken, as a protein, and ripe flavourful tomatoes.

Season chicken with salt and pepper on both sides.

Fry chicken on high heat in a pan with oil for 2-3 minutes per side.

Remove the chicken from the pan.

Fry tomatoes for 5 minutes on medium heat, until soft.

Add garlic and fry for 30 seconds.

Add chilli flakes, and spinach and cook for 3-4 minutes, until spinach wilted, stirring occasionally.

Add single cream, season with salt and pepper, and add dry oregano.

Return chicken and simmer on low heat for 2-3 minutes more.

And serve with favourite sides.
