Cod in Tomato and Olive Sauce with Polenta
Description
This meal is ready in about 30 minutes. So it will be perfect for any busy day. And it is light, but filling, perfect for weight loss.

Preheat a pan with olive oil on medium heat. Add onion and saute for 5 minutes, stirring occasionally.

Next, add tomatoes and cook for 10 minutes, until soft.

Then add olives and cook for 1-2 minutes.

Next season fish on both sides with salt, and pepper, and sprinkle with lemon juice.

Spread 2/3 of tomato sauce on a baking dish. Place fish fillets on top and spread the rest of the tomato sauce on top.

Bake it for 15-18 minutes, until fish flakes easily.

Meanwhile, cook polenta according to the instructions on the packaging.

When ready, serve fish and polenta and enjoy!
