Sauté the onion and garlic for 3 minutes on the pan with olive oil on medium heat, stirring frequently.
Add courgette and cauliflower, veggie stock and cook for 20 minutes on medium heat, until veggies are soft.
Puree the soup and add single cream, salt and pepper to taste. Simmer for another 2 minutes.
Gently fry scallops on medium heat in the pan with olive oil for 1-2 minutes.
Flip them, add butter, garlic, lemon juice, salt and pepper and cook for another 1-2 minutes.
Serve soup in a bowl and top with scallops.
