Courgette Soup with Scallops

Description

This low carb and low calories meal is great for weight loss dinner. A combination of flavours and textures is perfect. This can be cooked all year round, as the ingredients are available in store any season of the year.

Ingredients
  • 150 g scallops
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 garlic cloves (minced)
  • salt and pepper (to taste)
  • For soup:
  • 1 courgette (cubed)
  • 1 white onion (finely chopped)
  • 100 g cauliflower
  • 2 garlic cloves (minced)
  • 300 ml veggie stock
  • 100 ml single cream
  • salt and pepper (to taste)
Instructions
  1. Sauté the onion and garlic for 3 minutes on the pan with olive oil on medium heat, stirring frequently.

  2. Add courgette and cauliflower, veggie stock and cook for 20 minutes on medium heat, until veggies are soft.

  3. Puree the soup and add single cream, salt and pepper to taste. Simmer for another 2 minutes.

  4. Gently fry scallops on medium heat in the pan with olive oil for 1-2 minutes.

  5. Flip them, add butter, garlic, lemon juice, salt and pepper and cook for another 1-2 minutes.

  6. Serve soup in a bowl and top with scallops.
