Description

This salad will be perfect for weight loss as it is low on calories. I like to use chicken breast fillet because it is lean. And courgette and peppers are amazing with chicken. Add olives and capers (optionally) to boost flavour.

For the dressing:

  1. Marinate chicken for 10-15 minutes with salt, pepper, Italian herbs, olive oil, and lemon juice.

  2. Mix sliced vegetables with olive oil, salt and pepper.

  3. Grill vegetables for 10-12 minutes.

  4. Mix all the ingredients for the dressing.

  5. Steam the peppers for 5 minutes in the bowl covered with cling film. Peel peppers.

  6. Put on the plate grilled vegetables, chicken, olives, and capers, and add dressing on top.

  7. Enjoy!
