Description

This salad is so tasty and simple, and it will be a perfect source of protein and fibre for a healthy diet. This salad is perfect as a high-protein and low-carb lunch or dinner for busy days.

  1. Preheat the grill pan to hot.

  2. Season chicken fillet with salt and pepper.

  3. Grill chicken for 4-5 minutes per side on medium-high heat.

  4. Mix all the ingredients for dressing in a small jar, cover with a lid, and shake well until emulsified.

  5. Let cooked chicken rest for 2-3 minutes, then slice it into bite-sized pieces.

  6. Mix spinach, chicken, tomato, and artichokes in a bowl, pour dressing and gently mix. 

  7. Divide between plates and top with crumbled feta, and enjoy!
