I love all the flavours in this meal as they make ordinary chicken fillet and aubergine taste really good.

Ingredients

For honey soy marinade:

Instructions

  1. Preheat the oven to 200 C.

  2. Mix all the ingredients for honey soy marinade.

  3. Halve the aubergine lengthwise.

  4. Place the halves into a baking dish and pour 1/3 of the marinade on top. Then turn the halves cut down and bake for 30 minutes.

  5. Then halve the chicken fillet lengthwise, place it into the bowl and pour the rest of the marinade. Leave to sit aside for 15-20 minutes.

  6. Meanwhile, cook broccoli florets in the salted boiling water for 5-6 minutes until cooked al dente. Then drain and add a splash of olive oil and stir gently.

  7. Next fry chicken fillets on the pan with olive oil on medium heat for 4-5 minutes per side.

  8. When the aubergine, broccoli and chicken are ready, serve them sprinkled with some sesame seeds and chilli pepper slices. And enjoy!
