Lemon Cod with Parsley and Garlic

Preheat the oven to 180 C.

Rinse and pat dry each fillet.

Place the fish fillet on parchment paper large enough to encase the fish in the parcel.

Season the fillet with salt and pepper, and top it with 2 lemon slices and a piece of butter. Wrap the fish in parchment paper as a parcel.

Place on the baking tray and bake for 20 minutes.

Meanwhile mix olive oil, garlic and parsley in a small bowl. Season with salt and pepper and set aside.

When the fish is ready serve it warm topped with parsley garlic mixture and buttered asparagus and some cherry tomatoes. And enjoy!
