Preheat the oven to 180 C.

Bake sweet potatoes for 50-60 minutes, until nice and tender and cook through.

Meanwhile, mix all the vegetables in a bowl with olive oil, lime juice, chilli flakes, salt and pepper and let it sit aside.

When sweet potatoes are ready, let them cool down slightly and cut them half.
