Plum Cake
Description
When plums are in season this cake is a great way to have them as a dessert. The dough has an addition of almond flour that makes it crumbly and soft at the same time. So the base holds the plum filling very well.

Preheat the oven to 180 C.

In a bowl mix flour, almond flour, sugar, butter, and salt until form crumbles.

Add an egg, and vanilla extract and mix it all. Spread the dough in the baking form evenly making small borders about 1.5-2 cm high. Chill the dough in the form in the fridge for 10-15 minutes.

Into the bowl with plums add sugar and cinnamon and mix to cover evenly.

Take the baking form from the fridge and sprinkle 1 tbsp of the cornflour on the bottom of the dough shell. Add plums and spread evenly. Top the cake with almond flakes.

Bake the cake for 35-40 minutes.

When ready, let it completely cool down and dust with icing sugar on top.
