This speedy and flavourful meal is ready in under 20 minutes. Rich and tasty, hearty and simply scrumptious stew can be served with toasted on freshly baked bread.

Prawn and Chorizo Stew
Description
In this meal, I'm using cooked prawns that is just easier and quicker. The chorizo that I picked for it is spicy, so the stew has a chilli kick and it warms up perfectly. You can use canned chopped peeled tomatoes as I like to do. But if I have some time, I like to pour hot water into the bowl with fresh tomatoes, leave them for 4-5 minutes and then peel them and chop myself.

Fry onion in the pan with olive oil on medium heat for 5 minutes, until soft, stirring frequently.

Then add garlic and fry for 1 minute.

Next fry chorizo for 2-3 minutes, stirring occasionally.

Add chilli and paprika, chopped tomatoes and simmer for 4-5 minutes.

Add prawns, season with salt and cook for 1-2 minutes. Enjoy!
