Incredibly tender and fluffy, thanks to eggs and the moisture from ricotta—lighter than regular pancakes, almost souffle-like. Sweet, buttery, and warm, with hints of lemon zest, or whatever toppings accompany the dish.

Mix all the Ingredients for pancakes in a bowl until well combine. Set aside to rest.

Meanwhile preheat the pan with olive oil to low to medium heat.

Make pancakes with 2 tbsp of the batter for each. Cook them for 2-3 minutes per side until golden brown.

Divide pancakes into 2 plates, add yoghurt, berries and cinammon on top and enjoy!
