Sandwich with White Bean Hummus and Grilled Vegetables
Description
I like traditional hummus, but this is a great alternative to make at home. It is made with simple ingredients and I skipped tahini. I like to serve it with toasted bread and grilled veggies. And it is filling and for me goes as a light lunch meal.
Ingredients
For hummus:
For sandwich:
Instructions

Slice all veggies, place them on the baking tray and grill for 10-12 minutes.

Put all ingredients for hummus into a blender and blend until smooth.

Peel peppers.

Mix grilled vegetables with garlic, salt, and olive oil.

Spread hummus on toasted bread slices and put grilled veggies on one slice, cover with another one.
