Stuffed Baked Bell Peppers

Description

I like to cook peppers before stuffing them, so they are flavourful and hold the shape. Here I just boil them for 5 minutes and they turn out scrumptious stuffed with turkey mince and veggies. This recipe is great for weight loss and a low carb diet.

  1. First blend in food processor cauliflower, onion, and garlic.

  2. Halve the peppers and remove seeds and membranes.

  3. Boil peppers in hot water for 5 minutes, then remove peppers from the pan onto the baking dish.

  4. Fry turkey mince on the pan with 1 tbsp olive oil on medium heat for 3-4 minutes, stirring often, until no more pink.

  5. Add cauliflower mix and cook for 5 minutes, stirring often.

  6. Add salt and pepper to taste. 

  7. Fill in peppers with meat mixture, cover with foil and bake for 30 minutes at 180 C.

  8. After that remove foil, top with cheese and bake for 10 more minutes and serve.
