On a pan with olive oil, preheated to medium heat, cook the onion and garlic for 3-5 minutes.

Then add tomatoes and peppers, cook for another 5 minutes, stirring occasoinally.

Then add the mince, chopped mushroom stalks, parsley and season with salt and pepper and cook for 5 minutes, stirring occasionally.

Preheat the oven to 180 C.

Next divide the mixture between the mushrooms, add cheese on top and bake for 15 minutes.

When ready divide between 2 plates, serve with some simple green salad and enjoy!
