As they bake, the mushrooms turn tender, releasing a deep, earthy aroma that mingles with the sizzling scent of garlic, onions, and well-seasoned chicken. The filling itself is a harmony of flavors—juicy, well-seasoned chicken mince, softened vegetables, and a hint of spices that add depth.

  1. On a pan with olive oil, preheated to medium heat, cook the onion and garlic for 3-5 minutes.

  1. Then add tomatoes and peppers, cook for another 5 minutes, stirring occasoinally.

  1. Then add the mince, chopped mushroom stalks, parsley and season with salt and pepper and cook for 5 minutes, stirring occasionally.

  1. Preheat the oven to 180 C.

  1. Next divide the mixture between the mushrooms, add cheese on top and bake for 15 minutes.

  1. When ready divide between 2 plates, serve with some simple green salad and enjoy!
