Description

I like lean turkey mince in this recipe and it is perfect and juicy. The tomatoes are great for stuffing and are cooked fast. For easier prepping use beef tomatoes, as they can hold more filling.

  1. Cut the tops from the tomatoes and remove carefully seeds and flesh from the inside with a spoon.

  2. Tip the onion, garlic, carrot, celery, tomato flesh and seeds into the food processor and blend until coarsely chopped.

  3. Fry turkey mince on the pan with olive oil for 2-3 minutes (until no longer pink) on medium heat, stirring frequently.

  4. Add vegetable mix to the pan and cook for 6-7 minutes, stirring often.

  5. Add thyme and salt, and cook for 1-2 minutes more.

  6. Then fill up the tomatoes, place them in the baking dish and cover them with the tops.

  7. Cover with foil and bake for 20-25 minutes at 220 C.

  8. Serve with a green salad on the side and enjoy!
