Sweet Potato and Cauliflower Cream Soup
Description
I like vegetable soups. They are delicious, warming and nutritious, full of flavour and vitamins. The best way to serve it is with some fresh herbs, sesame seeds, and croutons. For more filling options add some pan-fried prawns or chicken fillet.

Preheat the pan with olive oil on medium heat.

Add onion and cook until soft, about 2-3 minutes, stirring occasionally.

Next, add celery and garlic, and cook for 2-3 minutes.

Then add sweet potato and cauliflower, and water, to cover the vegetables. Cook for 15 minutes on medium heat.

Next season with salt and pepper and cook for another 5 minutes.

Next, blend with a blender until smooth.

Serve with fresh parsley and a bit of olive oil and sesame seeds. Enjoy!
