Sweet Potato and Ginger Soup
Description
Simple and quick vegetable soups are healthy and tasty. I love to serve this soup with croutons or with pan-fried prawns, or in this case with feta cheese and fried shallots, so it makes the soup a complete meal.

Preheat the pan with 2 tbsp olive oil to medium-high heat. Then fry the onion for 3-4 minutes until soft.

Next, add leeks and cook for 1-2 minutes.

Then add garlic and ginger, and cook for 1 minute.

After that add turmeric, nutmeg, black pepper and salt. Mix well and add sweet potato, potato, and vegetable stock, cook for 20 minutes.

Meanwhile, fry shallots with 1 tbsp olive oil until golden brown.

Next, puree the soup until silky smooth.

Serve with crumbled feta cheese and fried shallots.
