Turkey Meatball Soup

It is an amazing combination of lean protein and loads of vegetables. And what a flavours are in this bowl of soup, that is ready in less than 30 minutes.

This healthy and easy soup is my family’s favourite. Perfect for light lunch or dinner.

Description

I like to use lean turkey thigh mince in this soup, so the whole meal is low on calories. But these meatballs are packed with flavours and as I add a variety of vegetables the broth in it is just right to make it perfect.

Instructions

  1. Mix all ingredients for meatballs in a bowl, cover with cling film and leave in a fridge for about 10 minutes.

  2. In a pot heat 1 tbsp of olive oil on medium heat, then add onion and garlic, and cook for 2-3 minutes, stirring occasionally.

  3. Then add carrot and celery and cook for 1-2 minutes.

  4. Next, add potatoes, and chicken stock and form and add meatballs the size of a walnut.

  5. Season with salt and pepper and cook until potatoes are tender, for about 25 minutes.

  6. Serve with some fresh chopped parsley.
