Super easy baked bacon wrapped zucchini is a great option when you don’t have time to cook. Just simply cut the zucchini and wrap it with bacon and when ready serve with salad.

Try to choose for this meal the same size zucchini, medium size is the best. You can use any bacon you like (smoked or unsmoked, but the streaky one works perfectly.

  1. Preheat the oven to 220 C.

  2. Cut zucchini lengthwise into 6 pieces.

  3. Wrap each piece of zucchini with 2 slices of bacon.

  4. Place it on a baking tray with parchment paper and bake for 25-30 minutes.

  5. Serve it with salad.
